
Sweet and Sour Pork Chinese Serves 4 INGREDIENTS
1 lb. boneless pork 1 cup flour 2 slices ginger, minced 1/3 cup diced onions 1/3 cup diced green bell pepper 1/3 cup diced red bell pepper 1 mango, peeled, seeded and diced 1 green onion, cut into 1 inch pieces Cooking oil for deep frying
MARINADE 2 tablespoons soy sauce 1 tablespoon cornstarch 1/4 teaspoon salt
SEASONINGS 1/3 cup ketchup 4 tablespoons rice vinegar 3 tablespoons soup stock 1 tablespoon soy sauce 2 teaspoons tomato paste 3 tablespoons brown sugar
COOKING METHOD
Cut pork into bite-size pieces. Combine pork and marinade ingredients into a bowl. Stir to coat. Let stand 10 minutes. Coat pork with flour. Shake to remove excess flour. Combine seasoning ingredients in a bowl and set aside. Heat cooking oil for deep frying. Deep fry pork for 3 minutes until golden brown. Remove and drain on paper towels. Heat 2 tablespoons cooking oil in a hot wok over high heat. Add ginger and onion. Stir fry until fragrant. Add green and red peppers and cook for 30 seconds. Add pork, mango, and green onions. Stir fry for 30 seconds. Add seasonings and cook until heated through. Transfer to a serving plate and serve with white rice. NOTES
